• sea salt and cracked black pepper

• 2 tablespoons ghee or bacon fat, divided

• 3 sprigs fresh rosemary

• 3 cloves garlic, halved

• 2 teaspoons fresh lemon juice

method

1. Place a roasting pan in the oven and preheat it to 400°F.

2. Generously season both sides of the pork chops with salt and pepper.

3. Heat 1 tablespoon of the ghee, the rosemary, and the garlic in a large skillet over medium-high heat.

4. Working in batches, sear the chops for 1 minute on each side, basting with the ghee from the pan as they brown. Add the remaining tablespoon of ghee after half of the chops have been browned.
